Nicole Stübiger studied medicine from 1984 to 1991 at the Eberhard-Karls-Universität Tübingen, where she received her license to practice medicine in 1991. From 1991 to 1997 she trained as a specialist in ophthalmology at the University Eye Clinic, Department of Ophthalmology at Eberhart-Karls University, Department of Ophthalmology and was appointed specialist in ophthalmology in Ophthalmology in 1997. From 1997 to 2010 she worked as a senior physician at the Department of Ophthalmology / Eberhard -Karls University of Tübingen, from 2010 to 2016 as a senior physician at the Department of Ophthalmology, Charite, University of Medicine Berlin. Since 2017 she has been working as a senior physician at the Clinic and Polyclinic for Ophthalmology at the University Medical Center Hamburg-Eppendorf (UKE) Medical Center Hamburg-Eppendorf (UKE). In addition, she teaches as a professor at the Ostfalia University of Applied Sciences Braunschweig / Wolfenbüttel, Wolfsburg Campus, Faculty of Health Care.

She is a member of the Association for Research in Vision and Ophthalmology (ARVO), the German Uveitis Working Group (DUAG), the Professional Association of Ophthalmologists (BVA), the German Association for Contact Lens Specialists and Optometrists (VDCO) as the International Uveitis Study Group (IUSG).
